I’ve heard rumblings about sprouted grains, and that they were a hot trend among health-conscious food lovers. But I wasn’t entirely sure what they were, or why I should be eating them. And since the Whole Grains Council has declared April Sprouted Grains Month, now was as good a time as any to find out more about these trendy little ingredients.
“Sprouting is a way to release all the vital nutrients stored in whole grains,” explained nutritionist Rania Batayneh, MPH, author of “The 1:1:1 Diet.” “The process of sprouting is as simple as taking a whole grain, nut or bean and bringing them to sprout as though you were planning on planting them, and then eating that sprouted seed.”
The health benefits are plentiful: foods made with sprouted grains are easier to digest and loaded with protein, vitamin B, vitamin C and carotene. They’re also pretty tasty, as evidenced by the following foods made with sprouted grains, which pleased our palates in a taste test.
